The Castle Hotel Windsor set to relaunch this summer following a £9.5 million refurbishment.
Dating back to 1528, the landmark hotel is undergoing ‘a comprehensive transformation’ to ‘attract the next generation of leisure and corporate guests’ while ‘retaining its historic character.’
As part of the transformation, a brand-new British brasserie will open.
The new restaurant Penningtons, named after the original innkeeper George Pennington, will be delivered in partnership with Auden Hospitality.
The new Penningtons bar will be inspired by the building’s origins as Windsor’s original tap room. Opening in June 2026, it will champion seasonal British produce ‘in a relaxed, social setting.’
This hotel relaunch brings with it 25 new jobs; several new roles are being created to elevate the guest experience.
Recruitment will include front of house positions, chef and kitchen teams, event professionals, restaurant and bar staff, as well as housekeeping roles.
As part of the Sutton Hotel Collection, this investment follows a reimagination of the Francis Hotel in Bath and the launch of its new signature restaurant Emberwood.
